Spinach Gruyere Whole Wheat Crackers

We started with this recipe and swapped out the cheddar for gruyere and added spinach. You can make these with any strong cheese you have, like a sharp cheddar or swiss. Rowan devoured that whole jar. I felt good since he was eating spinach!

Spinach Gruyere Whole Wheat Crackers

1 1/2 cups of shredded gruyere cheese or any strong cheese you like
4 tablespoons butter
1/2 cup whole wheat flour
1/4 cup all-purpose flour
1/4 teaspoon salt
1/3 cup frozen spinach

Preheat oven to 350 degrees.

Take frozen spinach, drain it. Wrap spinach in a dish bowl, squeeze out all of the water then measure.

Combine all the ingredients in a food processor unit they form a ball of dough around two minutes. You get this pretty light green ball.

On a lightly floured surface use a rolling pin and roll out the dough until it is about 1/8 inch thick. Using the back of a butter knife slice into rectangles or any shape.

Place crackers on an ungreased or parchment lined cookie sheet. Bake for 12-15 minutes until a bit brown. Remove from oven and let cool.
