I am a big fan of homemade desserts that I can make quickly and that don't have a list of ingredients a mile long. I always have coconut flakes in my freezer and the rest of this ingredient list in the cupboard.
Like the raw coconut macaroons, these are super easy, simple and delicious. You can count all the ingredients with your ten fingers, and if your gluten-free, you can enjoy these no problem.
Raw Chocolate Coconut Macaroons
2 cups unsweetened coconut
1/2 cup of raw cashews
1/4 cup + 2 tablespoon agave nectar
1/4 cup good unsweetened cocoa powder
1 tablespoon coconut oil
1 teaspoon vanilla
1/8 teaspoon sea salt
Pulvarize cashews in a food processor until powdery. Add the remaining ingredients to the food processor and grind until a pasty, sticky consistency. Use a tablespoon to scoop mixture and lay on parchment lined baking sheet. Freeze for a bit to set, about 20 minutes should do it. Don't worry if your mixture is a little wet, these firm up nicely in the freezer. Store in the refrigerator in an air tight container.
