raw chocolate coconut macaroons





I am a big fan of homemade desserts that I can make quickly and that don’t have a list of ingredients a mile long. I always have coconut flakes in my freezer and the rest of this ingredient list in the cupboard.

Like the raw coconut macaroons, these are super easy, simple and delicious. You can count all the ingredients with your ten fingers, and if your gluten-free, you can enjoy these no problem.

Raw Chocolate Coconut Macaroons

2 cups unsweetened coconut
1/2 cup of raw cashews
1/4 cup + 2 tablespoon agave nectar
1/4 cup good unsweetened cocoa powder
1 tablespoon coconut oil
1 teaspoon vanilla
1/8 teaspoon sea salt

Pulvarize cashews in a food processor until powdery. Add the remaining ingredients to the food processor and grind until a pasty, sticky consistency. Use a tablespoon to scoop mixture and lay on parchment lined baking sheet. Freeze for a bit to set, about 20 minutes should do it. Don’t worry if your mixture is a little wet, these firm up nicely in the freezer. Store in the refrigerator in an air tight container.

    I am not a big dessert maker for the same reason (too many ingredients and I am bound to fail). This looks super yummy and easy.

      that is why I make them. They are so easy and kind of full proof. Even if they come out wet or dry you either just add more oil or agave or you put them in the freezer to set.

I used to make these yogurt pops all of the time for my son and he would eat them for breakfast. If blueberries are not in season use frozen wild blueberries or whatever frozen fruit you like. They are really easy to make and you can even add some oats if you want to make them even more nutritious for breakfast. ⁠
Try Flower Breathing 🌸 In my last reel, I showed how to make these cardboard Lavender scented flowers. The "pistol" is scented with lavender oil which is a very calming and make it fun. The act of breathing in and out, calms the nervous system and get kids introduced to breath work. Flip through the images and use it as a guide plus one of the images is instructions that you can screen shot. 🌸⁠
