almond date granola bars

 



I made these bars this weekend, and we all have been devouring them. Rowan loves granola bars, and I like not relying on store bought stuff for him.

Almond Date Granola Bars

1 cup quick oats
1 1/2 cup slivered raw almonds
1 cup dates
3/4 cups honey
1 tablespoon peanut butter
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 teaspoon salt

Preheat oven 350 degrees.

In a food processor, pulverize oats and 1 cup of the raw almonds to the consistency of bread crumbs. Then, add dates remaining ingredients and blend until sticky and incorporated. Spill mixture out onto a board and fold in remaining 1/2 cup of almonds.

Add this mixture to a parchment lined small baking dish (3 cup / 4 1/2″ x 6 1/2″), and bake for 25-30 minutes. Remove from dish and cut into squares.

Store in an airtight container.
