snow day #2, almond chocolate chip cookies

We got hit with our second snow this week. We did get out of the house a bit, checked out the library, Rowan got a haircut and we made some cookies. These Chocolate Chip Almond Cookies are super yummy, gluten- free, and are pretty simple to make.  Also, Rowan could help which he was into.

Almond Chocolate Chip Cookies

2 cups raw almonds
1/4 finely ground flax seed
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/4 cup agave
2 tablespoons coconut oil
1 teaspoon vanilla extract
1 1/4 teaspoon almond extract
1/2 cup dark chocolate chips
1 tablespoon water if necessary

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

In a food processor, blend almonds, flax seeds, baking soda and salt. Grind until it forms a fine crumble the consistency of cornmeal. Make sure there are no large almond pieces.

Add chocolate chips. If your chips are large, pulse them to break them up a bit.

Add agave, coconut oil, vanilla and almond extracts and grind in food processor until combined and mixture pulls away from the edges. If it is too dry and crumbly, add water a teaspoon at a time to get the mixture to stick together.

Use a tablespoon to measure and roll into balls. Spread out about 2 inches apart on cookie sheet. Wet the palms of your hands and press down to flatten to 1/4 inch thickness.

Bake for 8-10 minutes. Rotate the sheets halfway. Let cool completely.

Hi Lisa, I'm going to share this recipe with my older daughter, Lexie. She is having a lot of fun exploring healthy eating, and I know she would love this.

When I was challenged with my own feelings while parenting, I started creating activities that could help kids and parents open up about their emotions. It was so therapeutic and helpful, so I put my feelings activities together into a book. I created the book that I wanted for my own parenting, and I am so thrilled to share it with you.
Vanilla Blueberry Yogurt Pops. I made this recipe this week after posting it in my newsletter and it was so fresh and yummy, so sharing it here! I used to make these yogurt pops all of the time for my son and he would eat them for breakfast. If blueberries are not in season use frozen wild blueberries or whatever frozen fruit you like. They are really easy to make and you can even add some oats if you want to make them even more nutritious for breakfast.
Try Flower Breathing 🌸 In my last reel, I showed how to make these cardboard Lavender scented flowers. The "pistol" is scented with lavender oil which is a very calming and make it fun. The act of breathing in and out, calms the nervous system and get kids introduced to breath work. Flip through the images and use it as a guide plus one of the images is instructions that you can screen shot. 🌸
