No-Bake Oatmeal Raisin Breakfast Bars

I love this recipe because it is something healthy that my son will always eat. He is such a picky eater these days and when I come across a recipe that works for him, I jump for joy. Plus, it is simple and easy and something the we can make in the kitchen together.

Oatmeal Raisin Breakfast Bars

Ingredients

1 cup rolled oats
1/2 cup raisins
1/2 cup dates
1/2 cup coconut shavings
1 teaspoon cinnamon
1 teaspoon vanilla
1/4 cup peanut butter
1/4 teaspoon sea salt
1 tablespoon water (if needed)

Instructions

Add ingredients into a food processor and blend. You may need to add water if it is too dry. Empty mixture onto a clean surface and form into a square. Wrap in foil or plastic wrap an refrigerate for at least 30 minutes until firm. Slice into squares.
