Healthy Snickers

I love these treats. I can put them together in minutes, and when any of us have a sweet tooth they are ready for us. The resemble the taste of a Snickers bar so they really feel like a treat. Dates are sugary so they aren’t totally virtuous but they the peanut butter adds protein and that nutty flavor.

These are sweet, chewy, and nutty. The dates provide that carmel richness and the peanut butter and chocolate do the heavy lifting in the gooey goodness department. I keep these in the freezer for a firmer more candy bar consistency and they make a great anytime treat.

Healthy Snickers

I'm giving measurements here, but really I never use them. This is a make fast have fun recipe. You really just melt chocolate in the microwave and go.

Ingredients

6 pitted Dates

1/2 cup Dark Chocolate Chips

6 teaspoons Peanut Butter

Sea Salt (or your favorite salt)

Instructions

Melt the chocolate chips either in the microwave or double boiler.

Cut slits halfway through the dates.

Smear peanut butter inside each date, and close it up. Refridgerated peanut butter works better for less mess, but either can work.

Dip the dates in the chocolate or pour the chocolate over the dates on a parchment lined dish.

Freeze

Flashback to a fun craft that my son loved when we were reading “Go Dog Go”, by Dr. Seuss. He was so into race cars, and this book was so cute. I loved it too. I miss those days! We made little cars out of toilet roll and I made some cute decals to give them that extra race car look.
This Sun + Rainbows Blocks free printable was inspired by spring. The out of the ordinary rain we have been getting has been resulting in some epic rainbow sightings. On the morning school drive, we saw one floating over the highway which made the epic California traffic seem almost pretty.
